Een prachtig gerenoveerde, geklasseerde pastoriewoning in het centrum van Opwijk is de thuishaven van restaurant Clay. Chef Roel Vandekerckhove brengt een eigentijdse keuken en wordt bijgestaan door zijn charmante echtgenote Zoë Dauphin die de bediening in goede banen leidt. Ceviche van makreel is gegaard in zuur van duindoornbes en komt met crème van duindoornbes, avocadocrème en gebrande avocado, en lamsoor om het ziltig karakter van het gerecht fijn te benadrukken. Zeebaars is oosters gelakt met daarbij shiitake, rolletje van koolrabi en saus op basis van kokos en chili-olie. Nieuw in onze selectie en meteen goed voor twee koksmutsen.
